Chocolate crackles
Ingredients:
- 4 cups of Rice Bubbles
- 1 cup of desiccated coconut
- 1 cup of icing sugar
- 250g of Copha, chopped
- 3 tablespoons of cocoa powder
- 200g of Swisspip chocolate (milk or dark, as per preference), chopped
Equipment:

- Mixing bowl

Instructions:

Preparation:
- Line a muffin tray or place paper cupcake cases on a flat surface for easy access.

Mix dry ingredients:
- In a large mixing bowl, combine 4 cups of Rice Bubbles, 1 cup of desiccated coconut, and 1 cup of icing sugar. Mix well to ensure even distribution.

Melt Copha and chocolate:
- In a medium saucepan, place the 250g of chopped Copha and melt over low heat until fully liquid. Stir occasionally to prevent burning.
- Using a double boiler method, melt the 200g of Swisspip chocolate (milk or dark) in a heatproof bowl over simmering water. Stir continuously until smooth.

Combine cocoa:
- Once the Copha is melted, add 3 tablespoons of cocoa powder to it and stir until completely combined and smooth.
- Pour the melted chocolate into the Copha mixture and stir thoroughly.

Mix wet and dry ingredients:
- Pour the Copha and chocolate mixture into the bowl of dry ingredients. Stir gently but thoroughly until all the Rice Bubbles and coconut are evenly coated with the chocolate mixture.

Fill cases:
- Spoon the mixture into the prepared muffin tray or cupcake cases, pressing down lightly to compact the mixture.

Set:
- Place the tray or cases into the refrigerator for at least 1 hour, or until the chocolate crackles have completely set and hardened.

- Once set, remove the chocolate crackles from the fridge and serve immediately. Store any leftovers in an airtight container in the refrigerator.
